The price of eggs in the U.S. saw a 53% year-over-year increase in January 2025, reaching $4.95 per dozen, according to the Bureau of Labor Statistics. This increase, mainly linked to avian flu outbreaks that have reduced supply, is forcing families to replace eggs with stones or marshmallows Who prioritize eating over decorating, highlighting the economic dilemma faced by low-income households.

The price crisis is a result of 150 million hens being culled since 2022 due to avian flu, according to the USDA. Although the Trump administration implemented a five-stage plan to contain the disease, producers have criticized its slow rollout. Meanwhile, the USDA projects egg prices could rise by up to 41% in 2025.

The 10% tariffs on Chinese imports and announced mass deportations are creating uncertainty in sectors that rely on migrant labor, such as agriculture and food service. “Without workers, the costs of food and services will keep rising,” warns the United Farm Workers union.

Behind the increase in prices is a health factor, but also migration and trade policies that deepen inequalities. While the USDA expects a slight improvement in prices by summer, millions are reinventing traditions in a country where selective inflation hits the most vulnerable.
